Zesty Orange Crêpes

This light, bright twist on a classic crepe is a delicious way to start your day. Try it topped with honey, Greek yoghurt or chopped nuts! This recipe makes approximately 12 crêpes .

Ingredients

  • orange 3 ½
  • plain flour 100 g
  • egg 2
  • whole milk 210 ml

Method

  • Zest the oranges, then slice them into wedges or slices.
  • Add the plain flour and orange zest with a pinch of salt to a bowl. Make a well in the centre and crack the eggs into it. Whisk in the milk until the batter is smooth.
  • Heat a frying pan over a medium heat, add a little oil or butter, and swirl the pan so it is evenly coated.
  • Add a small ladle of batter, and tilt the frying pan to spread the batter evenly.
  • Cook for 1-2 minutes on one side until is golden, then flip (if you're brave!) or carefully turn it with a spatula.
  • Fold each crêpe into quarters , place on a warm plate and cover with a clean tea towel. Repeat until all the batter is used.
  • Plate up the crêpes with the orange slices. Tuck in and enjoy!
