Winter Warmer Grain & Veg Traybake

When I'm stuck for what to cook, I always revert to roasting a load of veg then making some sort of grain/rice salad! Using a pack of 5 mixed grains is a great hack, you can play around with the vegetables according to what you have or fancy. This one is great for making a large batch on a Sunday to use up during the week.

Ingredients

  • carrot 4 (chopped)
  • red onion 2 (quartered)
  • portobello mushroom 4 (chopped)
  • 5 glorious grains mix 500 g
  • soy sauce 30 ml
  • vinegar 30 ml
  • nutritional yeast 2 tbsp
  • fresh parsley 1 handful (chopped)

Method

Prep & roast the vegetables

  • Preheat the oven to 180°C.
  • Chop up the carrots into bite-sized pieces, cut the onion into quarters and cut the mushrooms into chunky pieces.
  • Pop on a tray, drizzle with oil and a good pinch of salt then roast in the oven for 20-25 minutes until nice and roasted.

Heat the grains & finish the salad

  • Add the 5 glorious grains mix to the veg tray with a splash of water and heat through in the oven for 5 - 7 minutes.
  • Time to make it taste of something, add a little soy sauce, vinegar and nutritional yeast. Have a taste and add more if needed.
  • Finally mix through a big handful of chopped fresh parsley and enjoy!
