Za'atar Spiced Eggs With Tomatoes

This makes a perfect breakfast, lunch or a light dinner that comes together in 15 minutes. Za’tar spiced eggs piled high with juicy tomatoes, served on sourdough or your favourite bread. Za'atar is a Middle Eastern spice mix that typically includes dried herbs, sesame seeds and sumac.

Ingredients

  • cherry tomatoes 200 g (halved)
  • egg 8 (beaten)
  • za'atar 1 tbsp
  • sourdough 4 (toasted)

Method

  • Halve the tomatoes. Beat the eggs. Slice the sourdough.
  • Heat a dash of oil in a large frying pan over a medium heat. Add the tomatoes and fry gently for 5-6 minutes until the skins burst, move the tomatoes to one side of the pan.
  • Add the eggs to the pan and gently scramble them, then sprinkle over the za’atar.
  • Toast the sourdough.
  • Top the sourdough with the eggs and tomatoes.
