6 Ingredient Halloumi & Asparagus Orzo

A speedy meal with only 6 ingredients. Nothing says spring more than gorgeous asparagus. An easy veggie meal that's ready in less than 30 minutes.

Ingredients

  • frozen peas 100 g
  • halloumi 400 g (chopped)
  • asparagus 200 g (sliced)
  • radish 50 g (sliced)
  • lemon 1 (juice)
  • orzo 300 g

Method

Prep the ingredients

  • Defrost the peas. Slice the halloumi, asparagus and radishes. Juice the lemon.

Cook the pasta

  • Cook the orzo according to the packet instructions - cook in simmering water for 10 - 12 minutes until tender. Drain once cooked.

Cook the halloumi & asparagus

  • Meanwhile, heat a dash of oil in a large frying pan over a medium heat. Add the halloumi and fry until golden all over, 4-5 minutes. Stir in the peas and asparagus and warm them through.

Finish the dish and plate up

  • Dress the orzo with some oil and the lemon juice to taste. Scatter over the halloumi and radish. Enjoy!
