Easy Chicken Salad

This easy chicken salad is a great one to quickly whip up for an easy midweek dinner. You can also swap out the vegetables for whatever you have handy in the fridge.

Ingredients

  • olive oil 1 tbsp
  • mayonnaise 2 tbsp
  • black olives 50 g
  • spring onions 2 (sliced)
  • bell pepper 1 (sliced)
  • cucumber ½ (sliced)
  • cherry tomatoes 250 g (sliced)
  • mixed leaf salad 240 g
  • Dijon mustard 1 tbsp
  • fresh basil 1 tsp
  • lemon to taste (juice)
  • chicken breast 500 g (sliced)
  • ciabatta roll 4

Method

  • Thinly slice the chicken and bell pepper.
  • Heat the olive oil in a frying pan on a medium heat. Add the chicken to the pan and cook for 5 minutes. Add the bell pepper and cook for a few minutes. Season with salt and pepper.
  • Meanwhile, slice the cherry tomatoes in half. Slice the cucumber and spring onions. Pick the basil leaves. Zest and juice the lemon.
  • Make the dressing by mixing together the mayonnaise with the Dijon mustard and lemon zest. Season to taste with salt and pepper.
  • In a bowl mix together the salad leaves, cucumber, tomatoes, spring onions, basil leaves and olives.
  • Toast the ciabatta.
  • Plate up the salad in serving bowls and top with the chicken and bell pepper, serve the ciabatta on the side. Drizzle the dressing on top. Enjoy!
