Turkey & Stuffing Meatball Gnocchi Bake

Ingredients

  • turkey mince 500 g
  • stuffing mix ¼ tbsp
  • cranberry sauce 2 tbsp
  • butter 3 tbsp
  • garlic granules 2 tsp
  • plain flour 3 tbsp
  • wholegrain mustard 1 tsp
  • dried sage 2 tsp
  • milk 700 ml
  • gnocchi 500 g
  • spinach 1 handful
  • grated cheddar cheese 80 g

Method

Make & cook the meatballs

  • Preheat the air fryer to 180°C.
  • In a bowl mix together the turkey mince, stuffing mix and cranberry sauce. Season with salt and pepper, mix well then shape into meatballs (3 per person).
  • Cook the meatballs in the air fryer for 8 - 10 minutes. Alternatively, heat a dash of oil in a large frying pan on a medium-heat heat. Working in batches if needed, cook the meatballs until golden brown all over, around 7 minutes.

Cook the cheesy gnocchi

  • While the meatballs are cooking, make the cheesy gnocchi: Heat the butter in an ovenproof frying pan or a casserole. When the butter starts to foam, stir in the garlic powder and flour and cook for 1 - 2 minutes while stirring.
  • Gradually whisk in the milk, a little at a time. Keep whisking all the time to prevent any lumps.
  • Stir in the wholegrain mustard, dried sage and most of the grated cheddar (keep a handful to finish the dish). Add the gnocchi and spinach and cook for 5 mins.

Finish the dish & plate up

  • Preheat the grill to high.
  • Add the cooked meatballs to the cheesy gnocchi and scatter over the remaining cheddar. Grill until golden and bubbling, around 10 minutes. Then plate up and enjoy!
