Soy Sesame Turkey Lettuce Wraps

This is such a quick healthy fun one! A play on a Vietnamese turkey mince dish! The soy sesame flavour profile works so well with the turkey mince - you could also swap turkey for chicken, pork or beef.

Ingredients

  • turkey mince 500 g
  • sesame oil 2 tbsp
  • soy sauce 2 tbsp
  • fish sauce 10 ml
  • cider vinegar 10 ml
  • little gem lettuce 4 (leaves picked)
  • fresh coriander 15 g
  • lime 1 (sliced)
  • Veetee heat & eat basmati rice pots 250 g
  • chilli flakes to taste

Method

Make the turkey mince filling

  • Start by frying the turkey mince off in some sesame oil in a large frying pan for 4-5 minutes or until golden brown. (Here you could also add some lemongrass, ginger and garlic if you want).
  • Have a taste and season with your soy sauce and fish sauce; it should taste pretty good, a little vinegar goes a long way. If you want some heat pop in some chilli flakes.

Prep the lettuce & taoppings

  • Separate the little gem leaves, slice the lime
  • Toast the salted peanuts in a dry pan for a few minutes.

Cook the rice & Plate Up

  • Cook the Veetee heat & eat basmati rice pots according to the packet instructions.
  • All that is left to do is warm up your rice then get constructing your little lettuce cups. There is no correct order, load them up and enjoy.
  • Fill the little gem lettuce leaves with the turkey mince and basmati rice, top with the fresh coriander, lime and peanuts.
