Smoky Chipotle Sausage Broth

I am firm believer that cooking should be easy and delicious, and this is why I love using a cooking paste. Chipotle, curry, tagine you name it! Pair these pastes with coconut milk and you have an instant delicious broth! The chipotle paste here works really well with the creaminess of the coconut milk for a speedy meal that's super comforting. You can use your preferred sausages and add in any leftover veg too for a perfect fridge raid dinner. I'm using spaghetti - you can use your fave noodles or pasta.

Ingredients

  • chipotle paste 3 tsp
  • coconut milk 400 ml
  • vinegar 1 tsp
  • lemon ¼ (juice)
  • spaghetti 120 g
  • pork sausages 4
  • carrot 2
  • fresh coriander 10 g (leaves picked)

Method

Make the Chipotle Coconut Broth

  • Pop your chipotle paste and coconut milk in a pan and bring to the boil.
  • Give the broth a taste, it will need some help so a little salt and some acid from either vinegar or lemon to help balance it.

Cook the spaghetti

  • Meanwhile cook your **spaghetti* or noodles as per packet instructions.

Add the sausage & veg

  • When you are happy with the sauce pinch off little blobs of sausage into the broth along with some nice pieces of carrot. Simmer away for 5-6 minutes until the sausage is cooked and the carrot is just turning soft.

Finish & Plate Up

  • Divide the spaghetti into bowls, divide up the carrot and sausage equally then pour over the chipotle broth, top with some fresh coriander and you have a glorious meal!
