Tuna Pasta Salad

Ingredients

  • free from fusilli pasta 300 g
  • celery 3 (chopped)
  • cucumber 1 (chopped)
  • bell pepper 1 (chopped)
  • fresh parsley 1 handful (chopped)
  • tinned sweetcorn 165 g (drained)
  • lemon 1 (juice)
  • canned tuna 290 g (drained)
  • mayonnaise 150 g

Method

  • Cook the pasta according to the packet instructions. Once cooked, drain the pasta and run under cold water to help cool faster.
  • Dice the celery, cucumber and pepper. Finely chop the parsley. Drain the sweetcorn and tuna. Juice the lemon.
  • Prepare the dressing. In a small bowl mix the mayonnaise and lemon juice together, season with salt and pepper.
  • Mix the pasta salad. In a large bowl combine the pasta, dressing, the vegetables and tuna. Mix well.
  • Plate up the salad and enjoy!
