Tuna & Tomato Pasta Bake

This one's sure to become a real family favourite! An easy tomato sauce and tuna base is topped with creamy mozzarella and cooked until golden and bubbling. You can even prepare this ahead of time and pop in the oven when needed.

Ingredients

  • penne pasta 500 g
  • olive oil 2 tbsp
  • onion 1 (chopped)
  • garlic cloves 2 (crushed)
  • chopped tomatoes 800 g
  • dried oregano 2 tsp
  • sugar 1 tsp
  • canned tuna 370 g (drained)
  • grated mozzarella 200 g
  • fresh parsley 2 tbsp (chopped)

Method

  • Preheat the oven to 200°C/180°C fan.
  • Cook the dried penne pasta in a large pan of boiling salted water according to the packet instructions, then drain.
  • Meanwhile, heat the oil in a large saucepan and add the finely chopped onion and crushed garlic. Cook for 5 minutes until softened.
  • Add the chopped tomatoes, oregano, sugar and season to taste then simmer for 10 minutes.
  • Add the drained tuna to the tomato sauce and transfer to an ovenproof dish. Add the cooked and drained pasta and stir well.
  • Sprinkle the grated mozzarella on top and bake for 15 minutes until golden and bubbling.
  • Serve sprinkled with the freshly chopped parsley and enjoy!
