Tortilla Quiche Bake

Think you don't have time to make a quiche midweek? With this viral tortilla hack you do! Replace pastry with tortilla wraps and you have yourself the easiest midweek dinner. 10 minutes easy prep and let the oven (or air fryer) Take care of the rest. We've kept this one veggie but you can mix up the toppings as you like with whatever you've got in your fridge.

Ingredients

  • egg 8 (whisked)
  • plain tortilla wraps 2
  • mild cheddar cheese 100 g (grated)
  • grated mozzarella 80 g
  • cherry tomatoes 200 g (chopped)
  • tinned sweetcorn 150 g (drained)
  • spinach 2 handful
  • dried oregano 1 tsp

Method

  • Preheat the oven to 200°C/180°C fan/gas mark 6. Please note - this recipe makes 2 quiches - you will need 2 similar size small pie dishes, or you can cook them in batches. We used a 20cm shallow pie tin. You can use any shallow ovenproof dish that the tortilla wraps fit in.
  • Roughly chop the cherry tomatoes. Whisk the eggs together in a bowl and season with salt and pepper. Grate the cheddar and mozzarella, if not already grated. Drain the sweetcorn.
  • Brush the dishes with a dash of oil or cooking oil spray. Lay each tortilla wrap into the dish and press it down slightly with your hands.
  • Scatter the cheddar on the tortilla wraps. Then add the whisked eggs, spinach, tomatoes and sweetcorn. Finish with the grated mozzarella and dried oregano.
  • Bake the quiches in the oven for 20 minutes, until cooked through and golden. If you have a suitable sized air fryer, you could also cook them in it, timings may vary for your air fryer, but ours cooked at 180°C for 15 minutes. Remove the quiches from the dishes. Slice up and enjoy!
