Cheese & Tomato Turnovers

Ingredients

  • puff pastry 320 g
  • tomatoes 120 g (sliced)
  • Dijon mustard 1 tbsp
  • grated cheddar cheese 125 g
  • dried oregano 2 tsp
  • milk 30 ml
  • mixed leaf salad to serve

Method

Preheat the oven & prep the ingredients

  • Preheat the oven to 200°C/180°C fan.
  • Thinly slice the tomatoes.

Prep and bake the turnovers

  • Unroll the pastry and cut into 4 even rectangles. Place the pastry pieces onto a baking tray.
  • Spread each slice with a bit of Dijon mustard, top with tomatoes ,cheddar and dried oregano.
  • Fold the opposite corners of each slice of pastry together to create a turnover. Lightly brush any exposed pastry with a dash of milk.
  • Cook them in the oven for 15 - 20 minutes, until golden brown.

Plate up

  • Serve the Cheese & Tomato Turnovers with the mixed leaf salad. Enjoy!
