The Ultimate Garlic Bread

This is a mixture of French toast and garlic bread. It's great for using up leftover bread as well, as the garlicky, buttery, eggy goodness soaks into the bread rehydrating it and making it amazing. This is perfect to serve with a bowl of soup or as part of picnic.

Ingredients

  • garlic cloves 6 (crushed)
  • fresh parsley 1 handful (chopped)
  • Parmesan 150 g (grated)
  • grated mozzarella 50 g (grated)
  • egg 2 (beaten)
  • butter 100 g
  • homebake baguette 2

Method

Prep the ingredients & preheat the oven

  • Peel and crush the garlic. Chop the parsley. Grate the Parmesan and mozzarella. Beat the eggs.
  • Preheat the oven to 200°C/180°C fan.

Make the garlic butter

  • Melt the butter in a small pan over a medium heat. Add the garlic and gently cook for 1 minute, then allow to cool slightly.

Make the eggy filling

  • In a bowl combine the eggs, garlic butter, Parmesan and parsley, season with salt.

Assemble & bake the baguettes

  • Slice across the top of the baguette in even cuts, but don't cut all the way through.
  • Place the eggy filling inside the openings.
  • Bake the baguettes for 10 mins. Top with the mozzarella and bake for another 2-3 minutes until the cheese is melted and golden brown.

Plate Up

  • Serve the garlic bread with your favourite meal or as part of a charcuterie board.
