Speedy Spicy Tuna + Butter Bean Salad

A spicy, herby twist on the classic tuna mayo. Creamy Queen Butter Beans add bulk, heartiness and fibre, with thick Greek yoghurt for a cooler, lighter finish than the usual mayo job. Ingredients

  • tomatoes 2 (diced)
  • spring onions 2 (sliced)
  • fresh dill 1 tbsp (chopped)
  • fresh basil 1 tbsp (chopped)
  • Greek yoghurt 3 tbsp
  • canned tuna 240 g (drained)
  • Bold Bean Queen butter beans 570 g (drained)
  • jalapeños 2 tbsp (chopped)
  • little gem lettuce 2
  • pitta 4
  • hot sauce 2 tsp

Method

Prep the ingredients

  • Dice the tomatoes, slice the spring onion, chop the fresh dill and fresh basil.

Prep the salad

  • In a large bowl, combine the hot sauce, Greek yoghurt, fresh dill, fresh basil, tuna, Bold Bean Co Queen butter beans, spring onions, tomatoes, jalapeños including a splash of the brine, and a pinch of salt and black pepper and mix until fully combined.

Plate Up

  • Layer onto little gem lettuce leaves or stuff into a pitta when ready to eat.
