Speedy Sausage Bolognese

This Speedy Sausage Bolognese is a quick and delicious meal, we're using sausages instead of minces, adding heaps of instant flavour, it's a great recipe to have on standby! A classic dinner with a twist.

Ingredients

  • onion 1 (diced)
  • carrot 1 (diced)
  • garlic cloves 2 (crushed)
  • spaghetti 300 g
  • pork sausages 400 g
  • chopped tomatoes 400 g
  • tomato purée 1 tbsp
  • Worcester sauce 1 tbsp
  • Parmesan 60 g

Method

Prep the ingredients & cook the pasta

  • Peel and dice the onion. Finely chop the carrot. Peel and crush the garlic.
  • Cook the spaghetti according to the packet instructions. Drain when cooked.

Cook the bolognese

  • While the spaghetti is cooking, heat a glug of oil to a large frying pan over medium heat. Add the onions and carrots and fry for 5-6 minutes until they start to soften. Add the garlic and fry for another minute.
  • Add the sausages, and as they cook break them up with the back of a spoon. Cook until browned, around 5 minutes.
  • Stir in the chopped tomatoes, tomato puree and a splash of Worcestershire sauce and season to taste with salt and pepper. Leave to simmer for 5 - 7 minutes.

Plate up

  • Plate up and add your preferred cheese on top - we love Parmesan, cheddar or mozzarella.
