Speedy Kimchi Pasta

This is a perfect quick dinner that comes together in no time using a couple of storecupboard staples and two types of cheese. You can use any pasta shape you like. The kimchi gives this dish a depth of flavour and a delicious fiery kick - adjust how much you add according to personal taste. You could also any add leftover veg or meat, depending on what you have.

Ingredients

  • penne pasta 300 g
  • kimchi 200 g (chopped)
  • spinach 1 handful
  • cream cheese 165 g
  • grated Parmesan 80 g (grated)

Method

  • Cook the pasta according to the packet instructions. Drain once cooked.
  • If your kimchi is quite chunky, chop it into small pieces.
  • Heat a dash of oil in a large frying pan over a medium heat, add the spinach and cook until it wilts. Once it’s wilted add the kimchi and cream cheese, stir well to combine.
  • Add the cooked pasta and Parmesan and stir well. Season to taste, keep in mind that Parmesan and kimchi will add saltiness.
  • Plate up and enjoy!
