Speedy Creamy Sausage Gnocchi

This recipe is a true one pan dish that’s on the table in 30 minutes. We’ve packed in the veg, but don’t worry even the fussiest of eaters will love this one. For an extra special touch, a hint of golden turmeric contrasts perfectly with the sweet apple. Please note, if you are shopping with Sainsbury's, Ocado or Amazon Fresh, you will get regular pork sausages in your shop - the recipe will still be delicious!

Ingredients

  • red onion 1 (sliced)
  • garlic cloves 2 (crushed)
  • Porky Whites hog roast & apple sausages 400 g
  • ground turmeric ½ tsp
  • gnocchi 800 g
  • chicken stock cube 1
  • frozen broad beans 150 g
  • cream cheese 150 g
  • spinach 1 handful

Method

Prep the ingredients

  • Peel and thinly slice the red onion. Peel and crush the garlic.

Cook the sausage & red onion

  • Heat a dash of oil in a large, deep, non-stick frying pan over a medium heat.
  • Add the sausages, and as they cook break them up with the back of a spoon. Cook until browned, around 5 minutes.
  • Add the red onion and garlic, cook for another 3-4 minutes until softened. Stir in the turmeric and cook for a minute.

Add the gnocchi & make the sauce

  • Make up the chicken stock cube with 100ml boiling water per serving (e.g., for 4 people you will need 400ml stock).
  • Pour in the chicken stock with the gnocchi and broad beans, then bring to a simmer. Cook for 5 minutes, stirring occasionally, to allow the gnocchi to absorb some of the liquid and soften.
  • Stir in the cream cheese and mix well together until the sauce becomes creamy and smooth. Check the seasoning and adjust to taste.
  • Stir in the spinach and cook for a minute, until it starts to wilt.

Plate Up

  • Plate up your Creamy Speedy Sausage Gnocchi and enjoy!
