Smoky Sausage & Butter Bean Stew

This recipe has a hint of a cassoulet and then some goulash vibes with the lovely smoked paprika, so I've named it my casa-goulash. Ingredients

  • pork sausages 40 g
  • garlic cloves 3
  • tomato purée 100 g
  • butter beans 800 g
  • paprika 1 tbsp
  • vinegar ½ tbsp
  • feta 100 g (crumbled)
  • fresh parsley 1 handful

Method

Cook the sausages

  • Preheat the grill to high, then cook the pork sausages for 12 - 15 minutes, until cooked through.

Make the stew

  • Meanwhile, peel and bash the garlic cloves and gently fry in a little oil for 2-3 minutes.
  • Add the tomato purée and fry for a further 2-3 minutes.
  • Whack in the butter beans, plus the cooking water from their tin, with the paprika and simmer away for 10 minutes until you have a nice thick sauce.

Finish the stew with the sausages

  • Taste! Season with salt and a little splash of vinegar.
  • Slice the sausages and stir them through the stew.
  • Plate up the stew in bowls, top with crumbled feta and chopped fresh parsley and enjoy!
