Smashed Pizza Croissants

This recipe is part of our HexClad summer series collaboration - showcasing their hybrid cookware. Pizza meets croissant. Flaky, golden croissants smashed and stuffed with gooey mozzarella and pepperoni, then brushed with garlic butter and pan fried. These smashed pizza croissants are the ultimate comfort food mash-up. Served with a zingy courgette ribbon salad on the side to keep things fresh, light and just the right amount of fancy. Pizza, but make it pastry.

Ingredients

  • courgette 2 (peeled)
  • lemon 1 (zest & juice)
  • butter 2 tbsp
  • garlic granules 2 tsp
  • croissants 4 (sliced)
  • tomato passata 80 g
  • dried oregano 2 tsp
  • grated mozzarella 100 g
  • pepperoni 120 g

Method

Make the courgette ribbon salad

  • With a peeler, peel the courgette into long thin ribbons then add them to a bowl. Zest and juice the lemon.
  • Add the zest to the courgette ribbons, then season with salt and pepper. Stir in a generous dash of your preferred oil and add lemon juice to taste, mixing well. Set aside until you’re ready to eat.

Make the garlic butter

  • Melt the butter in a small pan, and when foaming stir in the garlic granules then take the pan off the heat.

Cook the pizza croissants

  • Slice each croissant in half. Spread each cut side with some passata. Scatter over some mozzarella on the bottom half, then 2 - 3 pepperoni slices and a sprinkle of dried oregano.
  • Pop the other half of the croissant on top and brush the top generously with the garlic butter.
  • Heat a dash of oil in a large frying pan on a medium heat. Depending on the size of your pan you may need to work in batches.
  • Add the croissant to the pan, garlic butter-side down, and smash it down with a spatula. Leave it to cook for 3 - 4 minutes.
  • Brush the other side with garlic butter then flip it over and cook for another 3 - 4 minutes.

Finish the croissants

  • Preheat the grill to high.
  • Brush the top of the croissant with a little more garlic butter then scatter over some mozzarella and 3 slices of pepperoni. Pop under the grill for a few minutes, until the cheese has melted.

Plate Up

  • Plate up the pizza croissants with the courgette ribbon salad. Enjoy!
