Smash Burger Tacos

Ingredients

  • lean minced beef 500 g
  • gherkins 4 (chopped)
  • plain tortilla wraps ⅓
  • mayonnaise 4 tbsp
  • ketchup 1 tbsp
  • American mustard 1 tbsp
  • paprika 1 tsp
  • iceberg lettuce 1 handful (shredded)
  • cheese slice 4

Method

  • Divide the beef mince into the number of portions you are serving. Take each portion and flatten it down on each tortilla wrap, spread it out so that it is as flat as possible, leaving a border around the edges of the wrap.
  • Heat a dash of oil in a frying pan on a medium-high heat (use a pan with a lid). When the pan is hot, add the wrap with the mince side down. Depending on how many people you are cooking for you may want to do this in batches or use two pans. You will need 1 wrap per person.
  • Cook the wrap for 5 minutes, then slide a spatula carefully under the burger and flip it over. Pop the cheese on top then pop the lid on. Leave it to steam for 2- 3 minutes, until the cheese has melted and the burger is cooked through. If you prefer you can use grated cheese instead of a cheese slice.
  • Meanwhile, make the burger sauce. Finely chop the gherkins. In a bowl mix together the mayo, gherkins, mustard, ketchup, paprika and 2 tsp gherkin juice from the jar of gherkins. Stir well and season to taste.
  • Shred or thinly slice the lettuce. Scatter the lettuce on top then a generous helping of the burger sauce. Plate up and enjoy!
