Sausages with Creamy Leeks & Beans

This is one of my favourite way to serve sausages, that all the family loves. Sausages with gorgeously creamy leeks and beans. The creamy leeks will be a staple in the house as they are so easy and tasty. Make sure you give yourself some time to cook the leeks down to really get their sweetness out.

Ingredients

  • leek 2 (chopped)
  • garlic cloves 6 (crushed)
  • butter 50 g
  • butter beans 400 g
  • double cream 300 ml
  • pork sausages 400 g

Method

Prep the ingredients

  • Chop the leeks. Peel and crush the garlic.

Cook the stew & the sausages

  • Heat the butter in a large frying pan over a medium heat. Add the leeks and garlic, season with salt and leave to sweat for 20 minutes, until they go sweet and soft.
  • Heat a dash of oil in another frying pan over a medium heat and fry the sausages for 12-15 minutes until cooked through. Alternatively, you can cook them in the air fryer for 12-15 minutes at 180˚C.
  • Add the butter beans and their liquid from the tin (or the equivalent in water if you prefer) to the leeks, add the double cream and leave to simmer for 10 minutes until the sauce is thick. Then plate up and enjoy!
