Easy Harissa Sausage Traybake

This is a super easy and versatile bake with only a few minutes of prep that's packed full of vegetables. It's the perfect, healthy midweek meal to share. Let the oven do the heavy lifting on this one. You can use vegetarian or vegan sausages, according to whichever you prefer.

Ingredients

  • red onion 2 (quartered)
  • garlic cloves 3 (peeled)
  • sweet potato 3 (diced)
  • aubergine 1 (diced)
  • tomatoes 200 g
  • harissa paste 1 tbsp
  • dried oregano 2 tbsp
  • olive oil 1 tbsp
  • meat free sausages 300 g

Method

Baking the Dish

  • Preheat the oven to 200°C fan/180°C with a large baking dish/tray inside.
  • Meanwhile, peel and quarter the red onions. Dice the sweet potatoes (no need to peel) and aubergine. Roughly chop the tomatoes.
  • Pop all the vegetables into a large mixing bowl and add in the harissa paste, oregano, a drizzle of olive oiland a pinch of salt, then mix until all the vegetables are covered.
  • Remove the dish/tray from the oven (be careful it will be hot) and add all the vegetables and tomatoes to the tray. Top with the sausages and bake for 25 minutes. You can drizzle the sausages with a dash of olive oil if you like.
  • Plate up the traybake and enjoy!
