Roast Peach & Tomato Salad With Feta

This Roast Peach & Tomato Salad with Feta combines the warm sweetness of roasted peaches with the freshness of cherry tomatoes, sweetness of cherries and the creamy tang of feta cheese. Chopped pistachios add great texture and all you need is some good oil to dress it up.

Ingredients

  • peaches 4 (halved)
  • cherries 150 g (halved)
  • sugar pinch
  • cherry tomatoes 200 g
  • feta 100 g (crumbled)
  • fresh basil 1 handful (chopped)
  • pistachios 50 g (chopped)
  • sourdough 4 (toasted)

Method

Roast the peaches & cherries

  • Preheat the oven to 200°C/180°C fan.
  • Halve the peaches and remove the stone. Pit and halve the cherries.
  • Place the peaches on an oven tray, sprinkle with some sugar and roast for 7-8 minutes until edges are golden. Half way though the cooking time, add the cherries to the roasting tin.

Prep the rest of the salt

  • Halve the cherry tomatoes, chop the basil, crumble the feta, finely chop the pistachios, toast the sourdough.

Assemble the salad

  • Plate up the roasted peaches, cherry tomatoes, feta, cherries and basil. Dress generously with a drizzle of good oil ,season to taste with salt and pepper and serve with toasted sourdough. Enjoy!
