Roast In The Hole

The Viking and I share a birthday, so I asked him what he wanted to eat for a special meal and he said a giant Yorkshire pudding filled with all his favourite things! He’s pretty easy to please and whilst it sounds complicated it’s actually really simple, it’s all about prepping all your favourite roast dinner items ahead and then making a really simple Yorkshire pudding batter. We filled ours with mashed potato and then went to town with veggie sausages, roasties, stuffing, green beans, carrots, peas, cauliflower. This recipe is perfect for using up your leftovers, but just in case, we’re giving you instructions to cook from scratch.

Ingredients

  • frozen roast potatoes 200 g
  • cauliflower 200 g
  • pork sausages 400 g
  • stuffing mix 170 g
  • potato 200 g (chopped)
  • butter 20 g
  • carrot 100 g (chopped)
  • green beans 100 g
  • frozen peas 100 g
  • plain flour 140 ml
  • egg 4
  • milk 200 ml
  • beef gravy granules 20 g

Method

Cook the roast ingredients

  • Preheat the oven to 230°C/Fan 210°C.
  • To roast the potatoes and cauliflower: Add the roast potatoes to a large baking tray and roast for 25-30 minutes. Add the cauliflower halfway through the cooking time.
  • While the potatoes are in the oven, prepare the stuffing mix according to the packet instructions, adding the specified amount of water and shaping into stuffing balls. Place the stuffing balls and sausages on one tray and place on another shelf in the oven. Cook for 25-30 minutes until cooked trough.
  • To make the mashed potato: Peel and chop your potatoes into small chunks. Boil them until soft in salted water. Drain then leave them to steam dry for a few minutes in a colander. Tip them back into the pan and gently warm through to help dry out the potatoes a little (avoid gluey mash). Mash them with a knob of butter or a dash of oil. Season to taste.
  • To cook the carrots, green beans and peas: Chop the carrots. Bring a pan of salted water to the boil. Cook the carrots and green beans until just tender, around 4 - 5 minutes, add the frozen peas right at the end of the cooking time. Drain and set aside.

Make the Roast In The Hole

  • If you need to, preheat the oven to 220°C/200ºC fan. You will need a large roasting tin.
  • Drizzle enough oil inside the tin to cover the bottom and place it in the oven to get it piping hot, about 10 minutes.
  • Prep the batter: In a large bowl combine the flour, eggs. Use a balloon whisk to whisk the eggs into the flour, it’ll be lumpy at first. Slowly start adding milk and whisking, the lumps will disappear.
  • Carefully remove the hot tray from the oven. Place the mashed potatoes in the middle of the tray, then pour the batter all around it. Place the tray back in the oven and roast for 35 minutes or until the bater has risen and is dark golden.
  • Remove the tray from the oven, place all the roast ingredients inside and roast for 10 minutes to warm through.
  • While the tray is in the oven, prepare the beef gravy granules according to the packet instructions.

Plate up

  • Take the Roast In The Hole out of the oven and drizzle with the gravy, plate up and enjoy!
