Pork Chop with Apple & Braised Butter Beans

Ingredients

  • pork loin chops 4
  • apple 1 ¼
  • garlic cloves 2 (crushed)
  • onion 1 (chopped)
  • fresh parsley 1 handful (chopped)
  • fresh sage 2 tbsp (chopped)
  • olive oil 2 tbsp
  • butter 2 tbsp
  • cider vinegar 2 tbsp
  • sugar 1 tsp
  • butter beans 800 g (drained)
  • double cream 2 tbsp
  • kale 200 g (sliced)

Method

  • Preheat the oven to 200°C/180°C fan.
  • Peel, core and cut the apples into wedges. Crush the garlic and finely chop the onion. Roughly chop the fresh parsley and fresh sage.
  • Heat the olive oil in a large frying pan on a medium heat. Add the pork chops and cook for 5 minutes on each side, or until golden-brown.
  • Place the pork chops and apples into an ovenproof dish .
  • Heat the butter in a separate pan on a medium heat. Add the onion and garlic and cook for 2 minutes, stirring occasionally. Add the cider vinegar and sugar and cook for a further 2 minutes.
  • Add the drained butter beans and cream then stir to combine. Add the parsley and sage and season with salt and pepper.
  • Spoon the butter beans into the dish with the pork chops and apples, along with 40ml water per serving. Cook in the oven for 15 minutes, or until the pork chops are cooked through.
  • Meanwhile, cook the kale in a pan on a medium heat with a dash of olive oil for 5 minutes and season to taste.
  • Serve the pork chops, apples and creamy butter beans alongside the kale and enjoy!
