A delicious and easy-to-make Paneer burger with sweet potato fries and a zingy Asian inspired slaw. This dish is perfect for a summer evening. Paneer, an Indian style fresh cheese, is an excellent alternative to halloumi.

Ingredients

  • paneer 450 g
  • burger buns 2 ⅓
  • sweet potato 2 (sliced)
  • carrot 1 (sliced)
  • mango 1 (sliced)
  • cucumber ½ (sliced)
  • natural yoghurt 2 tbsp
  • lime 1 (juice)
  • garam masala 2 tsp
  • garlic powder 2 tsp
  • ground cumin 1 tsp
  • olive oil 2 tbsp

Method

  • Preheat the oven to 200°C/180°C fan
  • Peel the sweet potatoes and cut into thin chips. Add to a baking tray and toss well with the olive oil, half the garam masala, garlic powder, salt, and pepper. Bake for 25 minutes, turning halfway through
  • Using a peeler, slice the carrot and cucumber into ribbons. Peel and slice the mango into matchsticks. Juice the lime. Mix the slaw by combining the carrot, mango, yoghurt, lime juice and cumin
  • Slice each block of paneer in half to create your burgers. Season with salt and the rest of the garam masala. Heat a dash of olive oil in a frying pan on a medium-high heat. Cook the paneer burgers for 4 minutes each side, until golden and crispy
  • Load up the burger buns with the slaw and paneer burgers and serve alongside the sweet potato chips and enjoy!
