Oozy Brie & Mushroom Croissants

Whether you’re looking for a delicious breakfast, brunch, lunch or a light dinner, this is a perfect speedy creation. This dish comes together in less than 15 minutes, packing classic ingredients like mushrooms and creamy brie. Make it your own by adding your favourite chutney, hot sauce or even a different type of cheese (cheddar or mozzarella would also be delicious).

Ingredients

  • chestnut mushrooms 200 g (sliced)
  • croissants 4 (halved)
  • brie 200 g (sliced)
  • fresh parsley 1 (chopped)

Method

  • Thinly slice the mushrooms. Half the croissants. Slice the brie. Finely chop the parsley. Cut the croissants in half.
  • Heat a dash of oil in a large frying pan over a medium heat. Add the mushrooms, season with salt and pepper and cook them for 4-5 minutes until browned.
  • Assemble the croissants - place each croissant half on a baking tray, top with the cooked mushrooms, slices of brie and fresh parsley.
  • Place under a hot grill for 3-4 minutes, until the brie is oozing and the edges of croissants are brown.
  • Plate up- serve the croissants immediately and enjoy!
