This will be the BEST Christmas Nut Roast you have ever tried - trust me! Not only is it absolutely packed full of flavour, it is also incredibly simple to make. A tasty centrepiece for your Christmas table or entertaining over the festive season. This is an excellent vegan alternative that everyone will love. You will need a food processor for this recipe.

Ingredients

  • chestnuts 180 g
  • walnut halves 150 g
  • cashews 100 g
  • dried apricots 100 g (sliced)
  • red onion 1 (chopped)
  • garlic cloves 2 (crushed)
  • carrot 1 (grated)
  • parsnip 1 (grated)
  • fresh rosemary pinch (leaves picked)
  • fresh thyme 1 handful (leaves picked)
  • gluten-free flour 130 g
  • sage to garnish (leaves picked)
  • chia seeds 2 tbsp

Method

  • Preheat the oven to 200°C/180°C fan/gas mark 6.Add the chestnuts, walnuts, cashews, and apricots to a food processor and pulse until they are blended into crumbs.
  • Grate the carrot and parsnip and crush the garlic. Finely chop the red onion. Pick the leaves from a sprig of rosemary and a small handful of thyme. Finely chop the thyme and rosemary leaves.
  • In a large mixing bowl add the nut mixture, gluten-free flour (you can use regular flour if you prefer), red onion, garlic, chia seeds, carrot, parsnip, rosemary and thyme and a large pinch of salt and pepper.
  • Toss together with your hands without pressing the mixture together. Add 135ml of water and start pressing the mixture together until fully combined and allow this to sit for 10 minutes.
  • Grease and line a loaf tin with olive oil or coconut oil and baking paper. Place 2 or 3 sage leaves in the bottom of the tin before spooning all the mixture on top. Press down gently. Place the tin on a baking tray and bake in the oven for 45 mins (ovens vary on timings so keep an eye on it).
  • Transfer the tray from the oven, then gently remove the nut roast from the tin. Use the baking paper to help you remove it from the tin. Leave it to rest for 10 minutes, to allow it to firm up before slicing. Use a very sharp knife to slice it. This is delicious served with steamed green vegetables. Plate up and enjoy!
