Air Fryer Mini Egg Pastries

Imagine a pain au chocolat...but filled with mini eggs?! Oh yes, we did, and now you can too. This super simple recipe only needs 4 ingredients and is so much fun to make. It's brilliant for getting kids involved in baking too. These little pastries are so moreish they'll be gobbled up quicker than you can say Easter Bunny! This recipe makes 8 mini pastries.

Ingredients

  • ready rolled puff pastry 1
  • mini eggs 160 g
  • egg 1 (beaten)
  • chocolate buttons 50 g

Method

  • Unroll the puff pastry onto the sheet it comes in, then slice it into 8 rectangles.
  • Take 1 rectangle and lay 2 or 3 mini eggs along the edge of each side of the pastry rectangle. Roll each side of the pastry inwards towards the centre, like a scroll. Turn the pastry upside down so that the folds are on the bottom.
  • Repeat until you have 8 pastries. Brush the top of each pastry with the beaten egg.
  • Bake in the air fryer at 170°C for 12 - 14 minutes, until the pastry is golden brown. Alternatively you can bake them in a conventional oven preheated to 200°C/180°C fan, for around 15 minutes. For the last 2 minutes of cooking you may wish to gently turn over the pastries and cook the underneath to stop them being soggy.
  • While the pastries are cooking, melt the chocolate buttons in the microwave. Add the chocolate buttons to a small microwave proof bowl then heat on high for 20 - 30 seconds, then give the chocolate a quick stir. Repeat if needed.
  • Leave the pastries to cool for a few minutes before drizzling with the melted chocolate and top with more mini eggs if you like. Enjoy!
