Meatball Caprese Sub

A juicy meatball sub with the flavours of our favourite salad - Caprese. Comes together in no time with pre-made meatballs, green pesto, creamy mozzarella and crunchy lettuce.

Ingredients

  • beef meatballs 340 g
  • green pesto 6 tbsp
  • tomatoes 4 (sliced)
  • little gem lettuce 2 (leaves picked)
  • mozzarella cheese ball 200 g (sliced)
  • ciabatta roll 4 (toasted)

Method

Cook the meatballs

  • Heat a dash of oil in a large frying over a medium heat. Fry the meatballs until golden all over and cooked through.

Prep the rest of the ingredients

  • While the meatballs are cooking, thinly slice the tomatoes and mozzarella, separate the baby gem leaves. Toast the ciabatta rolls.

Assemble the subs and plate up

  • Spread each ciabatta with the pesto, then layer up the lettuce, tomatoes, mozzarella and meatballs. Tuck in and enjoy!
