Ingredients

  • sweet potato 800 g (peeled)
  • butter 25 g
  • onion 1 (sliced)
  • chicken breast 4
  • miso paste 1 tbsp
  • sundried tomatoes 65 g
  • cream 75 ml
  • spinach 1 handful
  • Parmesan 50 g (grated)

Method

Make the sweet potato mash

  • Peel and chop the sweet potatoes.
  • Boil the potatoes until soft in salted water, around 8-10 minutes.
  • Once the potatoes are cooked, drain them in a colander and leave them to steam dry for a couple of minutes, then add them back to the pan.
  • Beat the butter into the potatoes and season to taste with salt and pepper. Keep warm.

Cook the chicken

  • While the potatoes are cooking, peel and slice the onion.
  • Heat a glug of oil in a large frying pan over a medium heat.
  • Cook the chicken breasts for approx. 5 minutes on each side until cooked through. Remove the chicken from the pan.

Make the sauce

  • Using the same pan from step 7, add a dash of oil and heat over a medium heat.
  • Add the onions and gently cook for 5-6 minutes. Stir in the chopped sun-dried tomatoes (as well as some of the oil from the jar) and miso. Stir well to combine and fry for a minute.
  • Add the cream and spinach and cook for a minute until the spinach wilts.
  • Add the chicken back to the pan, finish with some Parmesan. Check the seasoning and adjust if needed.

Plate up

  • Serve the Marry Me Chicken with the sweet potato mash.
