This high-protein wrap or sandwich filler is super easy to prep in advance for meal prep, using the delicious flavours of the Marry Me Sauce. Crispy Parmesan Oregano chicken is paired with fragrant sundried tomato yoghurt dressing for a lighter spin, spinach and shredded sweetheart cabbage. It's as good wrapped up for lunch as it is stuffed into pittas, piled onto jacket potatoes or portioned out for meal prep. This one's guaranteed to upgrade your weekly lunches/dinners.

Ingredients

  • chicken breast 2
  • plain flour 2 tbsp
  • egg 1 (beaten)
  • grated Parmesan 50 g
  • panko breadcrumbs 50 g
  • dried oregano 2 tsp
  • lemon 1 (zest & juice)
  • Greek yoghurt 150 g
  • spinach 60 g (sliced)
  • sundried tomatoes 60 g (sliced)
  • plain tortilla wraps 4
  • grated mozzarella 80 g (grated)

Method

Cook the crispy Parmesan chicken

  • Place the chicken breasts between 2 sheets of greaseproof paper and flatten with a rolling pin, or another heavy object, until they are about 1cm thickness all over (this helps them to cook quickly and evenly).
  • Add the plain flour with a pinch of salt and pepper to one bowl. Add the egg to another bowl and whisk. In a third bowl mix together the Parmesan, panko breadcrumbs and dried oregano.
  • Dip the chicken into the seasoned flour, shaking off any excess, then the beaten egg, then finally the Parmesan breadcrumbs**.
  • Preheat the air fryer to 200°C. Spray the Parmesan chicken lightly with cooking oil spray and air fry for 12-15 minutes, flipping halfway through, until golden and crispy.
  • Alternatively you can heat a dash of oil in a large frying pan over a medium heat. When the pan is hot add the chicken and cook on each side for 4 - 5 minutes, until golden and cooked through.

Make the Marry Me filling

  • Zest and juice the lemon. In a large bowl mix the zest with the Greek yoghurt, then add enough lemon juice to taste, season with salt and pepper.
  • Thinly slice the spinach and sundried tomatoes and add them to the lemony yoghurt.

Assemble & cook the wraps

  • In the centre of each tortilla wrap, add a portion of the Marry Me Filling, then top with some sliced chicken and grated mozzarella.
  • Fold in the sides of the wrap, then roll it up tight. Repeat until all the wraps are assembled. Then for an extra crispy finish, you can pan fry them in a pan on a medium heat for a few minutes on each side until golden.
  • Slice the wraps in half and enjoy.
