A speedy supper with 4 ingredients for when you need an easy comforting meal. Juicy tomatoes on crunchy toast with creamy mascarpone, dressed with your favourite oil.

Ingredients

cherry tomatoes 500 g (halved)
fresh basil 1 handful (chopped)
mascarpone cheese 200 g
white bread 8 (toasted)

Method

Halve the cherry tomatoes. Chop the basil.
Toast the bread.
Top the toasted bread with the cherry tomatoes, then dot with the mascarpone and chopped basil. Finish with a drizzle of olive oil and season with salt and black pepper. Enjoy!
