Hot Honey Pigs in Blankets Pasta

How to improve pigs in blankets? Combine them with cheesy pasta of course! Crispy pigs in blankets, creamy cheesy pasta, Brussel sprouts and a sticky hot honey drizzle. Sweet, spicy, sticky, and totally addictive. Shredding the sprouts and cooking them down into the sauce not only adds flavour, but we think will convert even the sprout haters!

Ingredients

  • rigatoni pasta 300 g
  • pigs in blankets 420 g
  • honey 2 tbsp
  • chilli flakes 1 tsp
  • Brussels sprouts 200 g (shredded)
  • garlic granules 1 tsp
  • cream cheese 80 g
  • Parmesan 50 g

Method

Cook the pasta

  • Cook the rigatoni according to the packet instructions. Drain when cooked, reserving some of the pasta cooking water.

Cook the pigs in blankets

  • While the pasta is cooking, preheat the air fryer to 180°C.
  • Cook the pigs in blankets in the air fryer for 10 -12 minutes, turning halfway through. (Alternatively you can cook them in a conventional oven at 210°C/190°C fan for 20 - 25 minutes). Once cooked, can chop them in half if you like.

Make the hot honey

  • While the pigs in blankets are cooking, add the honey and chilli flakes to a small pan (you can add less or more chilli flakes, depending on your preference). Simmer gently on a medium heat for 2-3 minutes.
  • Add the cooked pigs in blankets to the hot honey coating them all over.
  • Shred or grate the Brussel sprouts.

Make the pasta sauce

  • Heat a dash of oil or butter in the pan, add the shredded sprouts and the garlic granules and cook for 4 mins, until softened.
  • Add the cream cheese and a dash of the pasta cooking water to help emulsify it into a light sauce.
  • Add the pasta back to the pan and warm through. Scatter in the Parmesan, keeping some back to garnish the dish and mix well. Season to taste with salt and pepper.

Plate up

  • Plate up the pasta, top with the pigs in blankets and finish with the remaining hot honey. Enjoy!
