Hot Honey Pepperoni Gnocchi Bake

This easy Gnocchi Bake combines the soft texture of gnocchi with rich passata and spicy, sweet hot honey to create a quick meal. It's a one-pan wonder that's perfect for busy evenings. Pockets of oozy mozzarella and juicy tomato makes it comforting. Plus, it's ready to plate up in 30 minutes.

Ingredients

  • gnocchi 800 g
  • honey 2 tbsp
  • chilli flakes 1 tsp
  • tomato passata 500 g
  • dried oregano 1 tsp
  • garlic granules 1 tsp
  • spinach 100 g
  • pepperoni 100 g
  • mozzarella cheese ball 125 g (torn)
  • mixed leaf salad to serve

Method

Preheat the oven

  • Preheat the oven to 200°C/180°C fan.

Prep the gnocchi

  • Boil a kettle, then add the gnocchi to a bowl of boiling water, leave for 3 - 4 minutes, then drain.

Make the hot honey

  • While the gnocchi is in the boiling water, make the hot honey. In a small pan, gently heat the honey and chilli flakes, you can add less or more chilli, depending on how hot you like it. Simmer for 1- 2 minutes then take the pan off the heat.

Bake the dish

  • Place the drained gnocchi into a baking dish, pour the tomato passata over the gnocchi, add the dried oregano, garlic granules and the spinach and mix well, season with salt and pepper, stir to combine.
  • Dot the pepperoni on top, along with the torn mozzarella, pour the hot honey all over (you can keep back some hot honey to drizzle on top if you like, and bake for 15 minutes until the cheese is bubbling.

Plate up

  • Plate up the Hot Honey Pepperoni Gnocchi Bake with the mixed leaf salad. Enjoy!
