Hot Honey Halloumi & Watermelon Salad

This refreshing salad is a perfect contrast of sweetness, freshness and gentle heat from the hot honey. Salty halloumi works so well with the watermelon. A perfect companion for a BBQ or a light summer dinner. Ready in 15 minutes and super easy.

Ingredients

  • halloumi 450 g (torn)
  • honey 2 tbsp
  • Dr. Will's sriracha hot sauce 2 tbsp
  • flatbreads 1 (torn)
  • paprika pinch
  • little gem lettuce 2 (chopped)
  • watermelon 30 g (cubed)
  • cucumber ½ (sliced)
  • cherry tomatoes 200 g (halved)

Method

Prep the halloumi & flatbreads

  • Drain the halloumi then tear it into bite-sized pieces. Tear the flatbread into small crouton-sized pieces.

Cook the flatbread croutons & halloumi

  • Add the flatbread pieces to the air fryer, drizzle with a oil and sprinkle over some paprika. Air fry at 180°C for 5 - 6 minutes, until golden.
  • To make the hot honey: in a small bowl, combine the honey and Dr. Will’s Sriracha Hot Sauce.
  • Heat a dash of oil in a frying pan on a medium heat, add the halloumi and cook for 5 - 6 minutes, then pour in the hot honey and cook for another 2 - 4 minutes.

Prep the rest of the ingredients

  • Chop the little gem lettuce, cube the watermelon, slice the cucumber, halve the cherry tomatoes.

Assemble the salad & Plate Up

  • To assemble the salad - in large bowl combine the little gem lettuce, watermelon, cucumber, cherry tomatoes, halloumi and flatbread. Serve and enjoy!
