Hot Honey Halloumi & Bang Bang Beans

Ingredients

  • red onion 1
  • garlic cloves 2 (chopped)
  • cannellini beans 400 g (drained)
  • chopped tomatoes 400 g
  • cream cheese 50 g
  • Dr. Will's sriracha hot sauce 2 tbsp
  • spinach 150 g
  • halloumi 225 g (torn)
  • honey 2 tsp
  • lime 1 (juice & wedges)

Method

Cook the bang bang beans

  • Peel and chop the red onion and garlic. Drain the cannellini beans.
  • To cook the bang bang beans: heat a dash of oil in a pan over a medium heat. Add the red onion and garlic and cook for 3 minutes.
  • Stir in the cannellini beans, mashing some of them with the back of a spoon for a creamy texture.
  • Stir in the chopped tomatoes, cream cheese and 1/2 of the Dr. Will’s Sriracha Hot Sauce, mixing well. Simmer gently for 5 minutes.

Make the hot honey glaze

  • To make the hot honey glaze: in a small bowl, whisk together the honey and the remaining Dr. Will’s Sriracha Hot Sauce.

Cook the hot honey halloumi

  • To cook the hot honey halloumi: drain the halloumi and pat it dry and tear into bite-sized pieces. Heat a dash of your preferred cooking oil or spray in a frying pan over a medium heat. Add the halloumi and fry for 2–3 minutes on each side until golden and crispy.
  • Pour over the hot honey glaze and let it bubble for 30 seconds until sticky and glossy, then take the pan off the heat.

Finish the dish & Plate Up

  • Cut half the lime into wedges and juice the other half.
  • To finish the dish: stir the spinach into the bang bang beans and cook for a minute until wilted. Check the seasoning and adjust to taste with lime juice.
  • Spoon the bang bang beans onto plates and top with the sticky hot honey halloumi. Serve with the lime wedges. Tuck in and enjoy!
