Hot Honey Cheesy Beans

Hot honey meets cheesy beans. All you need is a few cupboard staples and your favourite cheese. Rich and warming flavours of paprika and cumin will make this dish your go-to for a comfort meal. Topped with cheese and finished with one of our favourite condiments - hot honey. Play around with the beans, cheese and even spices that you use to create this dish.

Ingredients

  • onion 1 (chopped)
  • bell pepper 1 (chopped)
  • garlic cloves 2 (crushed)
  • tomato purée 1 tbsp
  • paprika 1 tsp
  • ground cumin 1 tsp
  • chopped tomatoes 400 g
  • baked beans 415 g
  • red kidney beans 400 g
  • grated cheddar cheese 100 g (grated)
  • mozzarella cheese ball 125 g (torn)
  • honey 1 tbsp
  • chilli flakes pinch

Method

Prep the ingredients

  • Peel and chop the onion. Deseed and chop the bell pepper. Peel and crush the garlic.

Cook the dish

  • Heat a dash of oil in a large ovenproof pan or a casserole over a medium heat. Add the onion and bell pepper, season with salt and cook for 7-8 minutes until softened.
  • Add the garlic and cook for 1 minute, then stir in the tomato purée.
  • Add the paprika, cumin, chopped tomatoes, baked beans and red kidney beans. Bring to a simmer and simmer for 10-15 minutes.
  • While the beans are cooking, preheat the grill. Sprinkle the grated cheddar and tear the mozzarella over the top. Pop under the grill for 10 minutes until it's golden and bubbling.

Make the hot honey

  • While the dish is under the grill, make the hot honey: Add the honey and chilli flakes to a small pan (you can add less or more chilli flakes, depending on your preference). Simmer gently on a medium heat for 2-3 minutes.

Plate up

  • Plate up the the beans and drizzle with the hot honey. Enjoy!
