Healthy Fish & Chips

This recipe is great for making a homemade fakeaway for fish and chips. I love using sweet potatoes to make chips as a delicious and healthy alternative.

Ingredients

  • sweet potato 2
  • basa fish fillets 400 g
  • ground flax seeds 1 ½ tbsp
  • ground turmeric ½ tsp
  • frozen peas 150 g
  • olive oil 1 tbsp
  • fresh basil 1 handful (leaves picked)

Method

  • Pre-heat the oven to 200°C.
  • Slice the sweet potato into thin chips and place on a baking tray. Add a glug of olive oil with a pinch of salt and pepper toss the chips so they are covered evenly. Place in the oven for approximately 30 minutes, making sure to turn them every 10 minutes.
  • Make the crustfor the fish, by mixing the flax seeds, turmeric and olive oil into a bowl along with a pinch of salt and pepper.
  • Place the each piece of fish on some baking paper (enough so that you can wrap it up) and spread the crust evenly on the top of the fish. Once finished, wrap the fish up in a loose parcel.
  • Place in the oven for roughly 10-15 minutes depending on the size of the fish fillet.
  • To make the mushy peas: Add the frozen peas to some water and bring to a boil for 7-8 mins. Once cooked, drain them and add the olive oil, fresh basil, salt and pepper and hand blend to the consistency you prefer. You can also crush them with a fork.
  • Remove the sweet potato chips from the oven, along with the fish and serve up alongside the mushy peas and enjoy!
