Grilled Cajun Chicken Wraps

Delicious dinners don't have to be complicated and this one's no exception. Grilled chicken, avocado, lettuce, red onion and peppers are rolled inside this wrap and topped off with a flavoursome herby yoghurt. Note: Whatever you don't eat you can set aside in separate sealed containers to make a fresh wrap for another day.

Ingredients

  • basmati rice 200 g
  • chicken breast 2
  • olive oil 10 g
  • cajun seasoning 2 tsp
  • avocado 1 ½
  • bell pepper 30 g
  • red onion 1
  • iceberg lettuce 1
  • fresh parsley ½ handful
  • fresh chives ½ handful
  • natural yoghurt 100 g

Method

  • Pre-heat the grill and line the tray with some tin foil. Cook your rice according to packet instructions.
  • Slice the chicken breasts into long fingers, coat with the oil and cajun seasoning and place on the grill tray.
  • Cook the chicken under the grill for 5 minutes, turn over and then cook for another 5 minutes.
  • Whilst the chicken cooks, roughly chop the avocado, bell peppers and red onion, then set aside.
  • Finely chop the chives and parsley. Mix together with the yoghurt in a bowl.
  • Add the lettuce to the wrap, then place on the wrap, top with some yoghurt then add the chicken and vegetables and roll up.
  • Serve and enjoy!
