Ingredients

  • halloumi 400 g (torn)
  • chopped tomatoes 400 g
  • honey 2 tbsp
  • sriracha 2 tbsp
  • linguine 300 g
  • cream 50 ml
  • spinach 100 g

Method

Prep & Bag the Ingredients

  • Tear the halloumi into bite size pieces.
  • Add the halloumi, chopped tomatoes, honey and sriracha (you can use more or less sriracha depending on how hot you like it) to a freezer bag. Shake to cover all ingredients and add some salt and pepper if you like too.
  • Place in the fridge or freezer, until you want to use it. This will keep in the freezer for 1 month and in the fridge for up to 3 days. If you freeze the bag, please ensure you fully defrost it before cooking.

Cook the Dish

  • When you’re ready to cook, heat a dash of oil in a large frying pan over a medium heat.
  • Add the bag ingredients to the pan and cook for 10-12 minutes.
  • Add the cream and spinach, warm through and let the spinach wilt. Check the seasoning.

Cook the Pasta

  • While the halloumi is baking, cook the linguine according to the packet instructions. Drain once cooked.

Plate Up

  • Once the halloumi and vegetables are cooked, toss them through the pasta and plate up!
