Grab & Go Greek Style Chicken Orzo

A one tray wonder for busy weeknights. Juicy chicken, roasted veg and orzo all baked together in a herby tomato sauce. Think sunshine in a bowl with feta crumbles on top. When you’re ready to cook, just grab the bag, tip it in a dish, and let the oven do the work. Part of our Grab & Go recipe series, delicious dinners that you can prep ahead and store in the fridge or freezer until you need them. Then dump, cook, stir and enjoy.

Ingredients

  • red onion 1 (quartered)
  • courgette 2 (sliced)
  • bell pepper 1 (diced)
  • chicken breast 400 g (diced)
  • tomato passata 500 g
  • dried oregano ½ tbsp
  • garlic granules 2 tsp
  • orzo 250 g
  • feta 80 g (crumbled)

Method

Prep & Bag the Ingredients

  • Peel and quarter the red onion. Dice the courgette and bell pepper.
  • Chop the chicken into bite size pieces.
  • Add the red onion, bell pepper, courgette, chicken, passata, oregano, and garlic granules to a large freezer bag. Season with salt and pepper. Shake to mix together all the ingredients.
  • Place in the fridge or freezer, until you want to use it. This will keep in the freezer for 1 month and in the fridge for up to 3 days. If you freeze the bag, please ensure you fully defrost it before cooking.

Cook the Dish

  • When you’re ready to cook, preheat the oven to 200°C/180°C fan.
  • Tip the freezer bag ingredients and the orzo into a baking dish, stir to combine. Add 100ml water per serving (400ml for a serves 4, 200ml for a serves 2). Season well with salt and pepper. Cook for 25 - 30 minutes in the oven, stirring halfway through, adding more water if needed.

Plate Up

  • Plate up the Greek Style Chicken Orzo with the crumbled feta on top, add an optional drizzle of olive oil and enjoy!
