Grab & Go Chicken Fajita Gnocchi

This one-pan beauty is perfect for your freezer stash. Just grab the bag, dump it in a pan, and dinner’s done in 30. Juicy chicken, crisp peppers and red onions, pillowy gnocchi and a smoky fajita-spiced cream sauce, all in one cosy, comforting bowl. It’s Tex-Mex meets midweek magic. Ingredients

  • red onion 1 (sliced)
  • bell pepper 2 (sliced)
  • chicken breast 400 g (chopped)
  • mild cheddar cheese 50 g (grated)
  • tomato purée 2 tbsp
  • smoked paprika 2 tsp
  • fajita seasoning 1 tbsp
  • gnocchi 500 g
  • chicken stock cube 1
  • cream cheese 50 g

Method

Prep & bag the Ingredients

  • Peel and slice the red onion. Slice the bell peppers. Chop the chicken into bite size pieces. Grate the cheddar cheese.
  • Add the red onion, bell pepper, chicken, tomato puree, chicken stock cube, smoked paprika and fajita seasoning to a freezer bag. Shake to cover all ingredients and add some salt and pepper if you like too.
  • Place in the fridge or freezer, until you want to use it. This will keep in the freezer for 1 month and in the fridge for up to 3 days. If you freeze the bag, please ensure you fully defrost it before cooking.

Cook the Dish

  • When you're ready to cook the dish: Heat a dash of oil in a large pan (with a lid) over a medium heat. Add the bag ingredients to the pan and cook for 8 minutes.
  • Add the gnocchi and 100ml boiling water per serving to the pan (so if you’re cooking for 4 people you’ll need 400ml). Simmer for 5 -6 minutes, until the gnocchi is cooked.
  • Stir in the cream cheese, mix well then check the seasoning and adjust to taste. Cook for another 2 minutes.

Plate Up

  • Serve the Grab & Go Chicken Fajita Gnocchi with a sprinkling of grated cheddar cheese. Enjoy!
