Garlic Butter Chicken Tacos

Ingredients

  • butter 3 tbsp (melted)
  • garlic granules 2 tsp
  • dried parsley 1 tsp
  • chicken breast 500 g (chopped)
  • grated mozzarella 100 g (grated)
  • roasted red peppers 100 g (drained)
  • mini tortilla wraps 8

Method

Make the garlic butter

  • Melt the butter in a small saucepan over a medium heat or use the microwave.
  • Add the garlic granules to the butter. Season with salt and pepper. Let it cook gently for 1 -2 minutes, stir in the dried parsley and take the pan off the heat.

Cook the chicken

  • Chop the chicken into bite sized pieces.
  • Heat a dash of oil in a large frying pan over a medium heat. Add the chicken and cook until golden brown on all sides and cooked through, which should take 8-10 minutes.
  • Add some of the garlic butter to the pan and coat the chicken in it (keep the rest of the garlic butter to brush on the tacos).

Prep the rest of the ingredients

  • Grate the mozzarella if not already grated.
  • Drain the roasted peppers and thinly slice them.

Cook the tacos & plate up

  • Heat the same frying pan you used to cook the chicken over a medium heat.
  • Place a tortilla wrap inside the pan, top one half of the tortilla wrap with the chicken, red pepper, and mozzarella. Fold over the tortilla in half, press it down with a spatula, and brush the outside with some garlic butter. Flip it over and cook for 2 - 3 minutes on the garlic butter side.
  • Brush the other side with garlic butter before flipping it over and cooking for another 2 - 3 mins on that side too. Repeat the process until all tacos are cooked. Tuck in and enjoy!
