Meatball Bake With Garlic Bread Top

Ingredients

  • beef meatballs 340 g
  • paprika 1 tsp
  • dried oregano 2 tsp
  • chopped tomatoes 400 g
  • spinach 100 g
  • garlic baguette 390 g (sliced)
  • mild cheddar cheese 100 g (grated)

Method

Preheat the oven

  • Preheat the oven to 200°C/180°C fan. Take the garlic bread out of the freezer, if it's frozen.

Cook the meatballs

  • Heat a dash of oil in a large ovenproof frying pan over a medium heat. Add the meatballs and fry for 5-7 minutes until brown on all sides. (you can also transfer the sauce to a baking dish before baking if you prefer).
  • Add the paprika and dried oregano, stir to combine and fry for a minute. Add the chopped tomatoes, season with salt and pepper. Add the spinach and a couple of tablespoons of water, mix well and let it simmer for 2 minutes.

Assemble the bake

  • Slice the garlic baguette. Grate the cheddar.
  • Scatter some of the cheddar on top of the meatballs. Place the garlic bread on top of the meatballs, sprinkle the cheddar on top. (you might need to cut some of the garlic bread to fit).
  • Place in the oven and bake for 10 - 12 minutes, until the garlic bread is golden brown and the cheese is bubbling.

Plate up

  • Plate up and enjoy!
