Garlic Bread Pasta

Who doesn’t love garlic bread? We thought we’d create a speedy dinner that packs in that delicious flavour using some storecupboard ingredients. This comes together in no-time and you can easily play around with flavours, try adding paprika or other dried spices, use your favourite cheese or even use a garlic baguette to create the crumb. And if you have some leftover pasta (you probably won’t!), it can be used to make delicious frittata.

Ingredients

  • rigatoni pasta 300 g
  • panko breadcrumbs 50 g
  • garlic granules 2 tsp
  • dried oregano 2 tsp
  • butter 50 g
  • grated Parmesan 80 g (grated)

Method

  • Cook the pasta according to the packet instructions in salted water. When draining, keep some of the pasta water to help you emulsify the sauce in step 3.
  • While the pasta is cooking make the garlic crumb. Heat a glug of oil in a small frying pan over a medium heat. Add the panko breadcrumbs, garlic granules and oregano. Stir to combine and fry for 3-5 minutes, stirring occasionally. Set aside until step 4.
  • Drain the pasta (keeping some of the cooking water) then tip it back into the pan, add the butter, a generous dash of pasta water and the Parmesan, mix well to combine.
  • Plate up - place the pasta into bowls and top with the garlic crumb. Tuck in and enjoy!
