Fragrant Cod Stew

This easy cod stew uses my delicious tomato base, that's packed with veg. I am a big fan of making a tasty base which can then be used across multiple dishes, simply by adapting the flavours. The tomato base in this recipe can also be used for for pastas, rice, soups, stews - you name it. The fish can be swapped out for any fish you like, I'm using cod here.

Ingredients

  • onion 2 (diced)
  • bell pepper 2 (diced)
  • garlic cloves 6 (crushed)
  • ground cumin 1 tbsp
  • dried oregano ½ tbsp
  • ground cinnamon 2 tsp
  • chopped tomatoes 1200 g
  • frozen cod fillets 4
  • couscous 240 g

Method

Prep the ingredients

  • Peel and dice the onion, dice the pepper, peel and crush the garlic.

Cook the stew

  • Heat a dash of oil In a large saucepan over a medium heat. Add the onions and bell pepper then gently fry for 4-5 minutes until soft, add the garlic and fry for 1 minute.
  • Add the ground cumin, oregano and cinnamon and fry for another minute.
  • Stir in the chopped tomatoes and a splash of water, season to taste with salt and pepper. Bring the stew to a simmer and leave for 8-10 minutes. If the sauce gets too thick, add another splash of water.
  • Add the cod, cover with a lid and leave to simmer for another 10 minutes.

Cook the couscous & plate up

  • Menanwhile, cook the couscous according to the packet instructions.
  • Plate up the couscous with your fragrant stew and enjoy!
