Feta Fried Eggs

We tried the viral feta fried egg trend and we love it! As the feta melts and bubbles around the egg it forms a delicious crispy edge. We added a little drizzle of crisp chilli oil to for an extra flavour punch, but you can mix it up how you like it! What about adding a tablespoon of pesto or sun-dried tomato paste?

Ingredients

  • feta 100 g (crumbled)
  • egg 4
  • avocado 1 ½ (crushed)
  • plain tortilla wraps 4

Method

  • Crumble the feta into a non-stick frying pan on a medium-high heat. Leave a space for the egg in the centre of the feta. When you see the feta starts to melt, crack the egg into the centre. Depending on how many servings you are making you may prefer to do this in batches for each egg.
  • Leave the egg to cook for a few minutes. If the feta starts to overcook and the egg isn't cooked through, you can turn the heat down and pop a lid on top for a few minutes.
  • Meanwhile, remove the stone from the avocado and roughly crush the flesh with a fork. Season to taste with salt and pepper, keeping in mind the feta will add salt to the dish.
  • When the egg is ready, heat the tortilla wraps in a warm pan or microwave.
  • Build your tortilla: Add a layer of crushed avocado, then pop the egg on top. You could also add some sliced tomatoes or pickled red onions. Tuck in and enjoy!
