Ingredients

  • unsmoked gammon joint 1 kg
  • onion 1 (sliced)
  • carrot 1 (chopped)
  • black peppercorns 1 tsp
  • cider 500 ml
  • cloves 1 handful
  • brown sugar 80 g
  • English mustard 1 tsp
  • honey 1 tbsp
  • hot sauce 70 ml
  • fries 500 g
  • green beans 200 g

Method

  • Preheat the oven to 200°C/180°C fan.
  • Thickly slice the onion (no need to peel) and roughly chop the carrot.
  • Add the gammon to a large pan with the onion, carrot and peppercorns. Pour in the cider and enough cold water until the gammon is covered. Bring to a simmer and cook gently for around 1 hour. Leave to cool in the pan, for around 30 minutes.
  • Transfer the gammon to a baking tray, remove the skin and score the fat in a diamond pattern with a sharp knife. Stud the gammon with the cloves.
  • Add the soft brown sugar, English mustard, honey and hot sauce to a microwave safe bowl. Microwave on high for 1 - 2 minutes, or until the sugar has dissolved. Pour the glaze over the ham. Bake in the oven for 30 minutes, leaving to rest for 20 minutes before carving.
  • Meanwhile, bake the fries in the oven on a separate baking tray, according to the packet instructions.
  • Cook the green beans in boiling water until tender then drain.
  • Once the ham has rested, carve it up and serve with the fries and green beans. Enjoy!
