Easy Slow Cooker Sausage & Chickpea Casserole

This nourishing dish is perfect for when you want an easy family dinner with minimal hands on prep. Once you've prepped your ingredients let the slow cooker do all the hard work! Warming spices cumin, paprika and coriander are the perfect match for vegetarian sausages, black beans and chickpeas. Any leftovers are also great for lunch the next day!

Ingredients

  • meat free sausages 400 g (chopped)
  • onion 1 (diced)
  • garlic cloves 2 (diced)
  • black beans 400 g (drained)
  • chickpeas 400 g (drained)
  • chopped tomatoes 1
  • bell pepper 1 (diced)
  • ground cumin 1 tsp
  • paprika 1 tsp
  • ground coriander 1 tsp
  • mild chilli powder 1 tsp
  • vegetable stock cube 1 (crumbled)

Method

  • Finely dice the onion, roughly dice the bell pepper, dice the garlic and chop the sausages into bite-sized chunks.
  • Add all of the chopped ingredients into the slow cooker with the spices, tinned ingredients, stock cube, 30ml of water per person and a pinch of salt and pepper.
  • Pop the lid on and cook on high for 3.5 hours or on low for 7 hours.
  • Stir well before serving, check the seasoning and adjust to how you like it, then plate up and enjoy!
